A Southern Staple: Pimento Cheese

As an adult I find that my palate has definitely evolved. There are so many things from my childhood that I have rediscovered that I find absolutely delicious. For example, I have a new found love for brussel sprouts, beets and lamb. One food item that has always been curious to me but equally appalling has been pimento cheese. Who in the world though mixing mayonnaise and shredded cheddar cheese was a good idea!? If you are in the south, it's always a good idea and it pairs well with salted, buttery crackers!


Pimento cheese is having a moment now and although considered 'low country' has found itself on many more menus these days along side artisan crackers and homemade pickles.

The ingredients are pretty simple and most southern families have their own tradition. Once you have the base complete, you can pretty much add whatever you like and make it your own.


Pimento Cheese

Ingredients

  • shredded sharp cheddar cheese

  • mayonnaise

  • pimentos

  • green onion or chives

  • cream cheese

  • onion powder and garlic powder

Just mix all of the ingredients together and serve! You can serve along with crackers, fresh veggies like peppers and celery or even make a grilled cheese sandwich.
